How is your RAM not hitting the radiator fans? I tried this exact same set-up with the only difference being my motherboard a STRIX variant and the thickness of the radiator and fan ends up hitting the RAM :(

Thanks! The hoses are actually really stiff on the H100i v2 so when I place the block correctly I felt like there was unneeded tension basically pushing the block away (kinda hard to explain lol). But regardless of that, it would have made the hoses stick out and since this case is pretty thin, I don't think I would have been able to get my front panel on. And I didn't want to turn the radiator upside down and have the hoses come across the GPU, etc. :D
It should be able to get things to 60 FPS but I won't have any hands on experience until around March when it's widely available. I'm not counting on it to achieve 100+ FPS so that's why I'll be getting the new 1080Ti when it releases. I assume that will be able to hit those higher numbers.
Cool - that helps a lot, thanks! I did notice on Cablemods site that they don't have the Corsair SF cables listed generally but if you use their "Custom Configuration" feature then I do see the SF450/SF600 listed. To be safe I'll probably end up doing that. We'll see...
First off, awesome build! Going to do something very similar but am having some trouble figuring out the details of the SF600 cable situation. Which Basic Kit from Cablemod did you use exactly? I see they have a set for RMi and then another for AXi, etc.
What memory did you end up going with?

I'm going for a very similar build. Your fan placement, are the top fans on the rad pulling for exhaust with the rear 140 also exhausting? That's what I've been leaning towards.
