My goal with this is to do 1080p gaming and some light video editing. I originally was going to get the 2600x and a RTX 2060, but I feel like I need to reconsider since everything is now released. Would it be worth it getting a 3600 cpu and a RX 5700/5700XT?

Maybe if you can swing the extra $40, but I had to use $11 more for a better PSU buffer, the 5700XT is a power-hungry card.

I would wait for the new RTX 2060 super GPUs and pair it with a Ryzen 3600.

I would recommend that you compare price to performance for both the CPU and the graphics card. You will soon see loads of reviews and benchmarks for the new Zen 2 and Navi products, and I always use cpu.userbenchmark to look at rankings for chips based on a large sample. Give it at least a week for this site to build up scores for these new products though.

Can you afford it? If yes, then go for it! Go for X570 mobo. Look at upgrading the PSU to 650W Gold since Radeon VGA's are power hungry. Will set you maybe $250 - $300 extra over your current cost, all new parts. Worth it? For 1080p gaming, not too much unless you are a competitive gamer and streamer. But consider this: How often do you build PC's? If not very often (i.e. every 4 or so years), then nothing wrong with a little splurge here and there. After all we think nothing about ordering overpriced take out pizza once a week and drinking way overpriced Starbucks coffee every day..... As the Atari Jaguar slogan once said, "Do the Math"...

The 1080P@144Hz sounds rough for the 2700X. If you want to decrease your GPU settings until you hit those numbers, you will likely want a 3600 (but don't expect miracles. Just a slight improvement over the 2700X).

The 3600 is ~5% better at gaming (and your monitor presumably won't bottleneck it) while the 2700X is ~5% better (maybe even less) at high thread throughput (like streaming). Your call.
