What would happen if you put a AMD Ryzen 7 2700X Processor with Wraith Prism LED Cooler - YD270XBGAFBOX?

Besides better performance, higher OC potential and the fact that the 2700X would become obsolete after the 2600 does, the main different would be the amount of energy the 2700X uses at base clock vs the 2600.

2700X uses 105 watts while the 2600 uses only 65 watts. While I believe the PSU in this guide would support that change in power, it does mean that the 2700X does create more heat so you might want to consider some cooling components for your case. Otherwise should be fine.
